Fruit marinated rack of lamb with potato cake, pickled onion, enoki & chive salad, soy bean paste
I took inspiration from the traditional favours of a Korean bbq and paired them with one of Australian’s most popular meats.....lamb. The potato cake element was inspired by my mother. It was my childhood snack. I lived on an island in Korea and most of farmers were producing tangerine and potatoes. She always bought fresh potato and grated and cooks for me. It’s crispy outside but nice soft texture inside. And it’s just 100% potato as well.
