Nettle Pappardelle with Red Tussock Venison Ragu
As my ancestors originate from southern Italy, I like to create with that in mind. Southern Italy food is game meats and bold flavours cooked with wild ingredients and simple fresh flavours and that is exactly what this dish is. Pappadelle just happens to be my favourite kind of pasta too!
