Dish Inspiration

Squid Ink tortellini - This dish is inspired by my father. My father travelled the world with environmentalist Jacques Cousteau as their Executive Chef on board the Alcyone for 10 years. I used to watch the documentaries on TV as a child and stare in awe at my dad traveling the world on this amazing ship. I fell in love with the ocean and its contents because of it. Dad would send me Jacques Cousteau's books and one I remember vividly had a photo of a squid with black ink forming swirly clouds around itself.

Smoked Crocodile - A few years ago I went on a road trip from Perth up to Darwin. We found a gorgeous spot after bush walking and thought we needed to have a quick dip to save ourselves from the heat. As we headed down to the bank enjoying the scenery, a crocodiles nose protruded from the water and began to float towards us up the sand just meters away. I don't think we have ever run so fast in our lives & the croc would have definitely enjoyed the esky of beer and the beef & caramelised onion sandwiches we left behind!
